Red Flannel Hash:

Ingredients:

7-9 Yukon Gold Potatoes diced (you can use any, but the golds are best in this one)

1 160z can of sweet pickled beets; drained and diced

2 sweet onions diced

2 lb of Conecuh Sausage sliced into rounds

salt and pepper

2 TBS Garlic Powder or minced garlic

1/4 cup olive oil

1 un-cracked egg per person eating for poaching


Directions:

Hash

1) In a large skillet, add oil and heat until oil sizzles when you add anything to it

2) Add in potatoes, salt and pepper and garlic; cook until half way cooked

3) Add in onion and sausage and cook together until almost cooked through

4) Add in pickled beets and finish cooking the skillet

5) Either poach (definitely the way to go here) or fry an egg per person to top each bowl of

hash with and serve
