Fresh Milled Hummingbird Cake

Yesterday was two of my dearest friends' birthday. One lives about 7 hours away and required the aid of delivery services to shower with all the sweet treats and fun teas we would have shared on the sofa while our littles played; but my other friend lives just up the road. So, as I pondered what to make for her while also bidding farewell to spring, this Hummingbird cake seemed the perfect choice!
I have been LOVING my Nutrimill Harvest grain mill and any opportunity we have to utilize fresh flour in our meals or treats, it's on! If you aren't familiar with fresh flour, the texture can be a bit of a change, but the flavors... oh the flavors! They truly can't be beat!
For this cake I combined 25oz Clark's Cream, 25oz of hard white, 15oz ancient einkhorn, 15oz scotch fife. I ran this twice on the mill, once on fine grind depth, then another spin on extra fine. It was ALMOST as smooth as AP flour from the store. The buttery and nutty notes blended serendipitously in this cake. Truly a chefs kiss moment here! So without further adieu....

Ingredients:
Cake-
4cups Fresh Milled Flour Blend (I used the above
blend for a wholegrain blend)
.5 cups brown sugar
1.5cups cane sugar
1TBS baking powder
1TBS baking soda
Dash of salt
2TBS vanilla extract
2tsp almond extract
3 larg eggs
.5cups oil
.5 cups milk
.75 cup water
.25 cup pineapple juice
1 cup crushed pecans
1 cup crushed pineapple
Frosting-
1 brick room temp cream cheese
2.5cups powder sugar
1 tbs vanilla bean paste
3TBS milk
1) preheat ovento 350
2) Combine all dry ingredients. *It makes note that you can sift the flour to remove the bran, but I do not because I want ALL the health benefits of fresh flour*
3) cream wet ingredients and sugar together in separate bowl
4) slowly combine the dry to wet ingredients
5) fold in pineapple and pecans
6) pour even amounts into 8in round pans
7) bake for 35 minutes or until toothpick comes out clean on the sacred and beloved "toothpick test"
8) flip out to cool on cooling racks
For icing: combine all ingredients in a large bowl and mix with mixer on high.
Next, assemble to your preferred desires. Mine included snacking on the frosting as I went.
*you can Garnish with fresh fruit, herbs or leave as is!
