Our crew has been battling Strep and a Rodoviris this weekend. Amongst all the littles feeling puny and momma under the weather I came across a similar version of this soup as what I ended up preparing for dinner tonight.
This was a super simple. Super healthy and super tasty dinner while we weren't feeling so great.
What you'll need:
1 pack boneless skinless chicken thighs
1 head of bok choy
1 pack of baby Bella mushrooms sliced
1 10 Oz pack shredded carrots
1 package of bean sprouts
1 lemon
1 tsp cracked black pepper
1 tbs sambal olek sauce
3 tbs sesame oil
1cp soy sauce
1/4cp honey or agave
1 tbs garlic minced
1 tbs fresh grated ginger
1 tsp ground tuneric
8cups chicken stock
1 tbs salt
1 box rice noodles
How to make it:
In a large soup pot, add minced garlic, sesame oil and sambal sauce, and spices.
Once warmed add your thighs. Add in chopped
bok choy, carrots and bean sprouts. Cook until chicken is fully done. Top with mushrooms and stock. Simmer for 45 minutes.
On the side in a separate pot, prepare rice noodles to directions.
Combine into soup pot once soup has simmered.
